INGREDIENTS

  • 1 rack Dino Ribs
  • Habanero pepper purée (as needed)
  • Salt and Pepper (to taste)

DIRECTIONS

  1. Begin by trimming the Dino Ribs, ensuring to leave some good fat.

  2. Apply Habanero pepper purée all over the ribs as a binder.

  3. Season the ribs with salt and pepper on all sides.

  4. Put the ribs in a smoker set at 225 degrees.

  5. Prepare the BBQ sauce while the ribs are smoking. Combine all the ingredients, blend, and then simmer on medium heat for 15 minutes.

  6. Once the internal temperature of the ribs reaches 203 degrees, remove them from the smoker.

  7. Let the ribs rest for 1 hour. This allows the juices to redistribute, enhancing the tenderness of the meat.

  8. After resting, slice into your creation and serve with the homemade BBQ sauce. Savor what might just be the best sandwich you've ever tasted!

Notes

Let the ribs rest for at least 1 hour after cooking before slicing.

 

For the BBQ Sauce:

  • 1 cup Ketchup
  • 2 tsp Chipotle Pepper Purée
  • 1/2 cup Brown Sugar
  • 1 1/2 oz Apple Cider Vinegar
  • 1 oz Water
  • 1 tbsp Mustard
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
