INGREDIENTS
- 700g potatoes
- 1/4 cup milk
- 4 tbsp butter
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 4 cloves garlic, minced
- 500g minced lamb (or Ground Beef for Cottage Pie)
- 2 tsp all-purpose flour
- 3 tsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 2 tsp freshly chopped or dried rosemary
- 1 tsp freshly chopped or dried thyme leaves
- 1/2 cup corn kernels
- 1/2 cup peas

In a large mixing bowl, mash the boiled potatoes, milk, butter, kosher salt, and freshly ground black pepper until smooth and creamy.

In a skillet, heat olive oil over medium heat and sauté the chopped onion, diced carrots, and minced garlic until tender and fragrant.

Add the minced lamb (or Ground Beef for Cottage Pie) to the skillet, season with kosher salt and freshly ground black pepper, and cook until browned.

Sprinkle all-purpose flour over the lamb and vegetable mixture, stirring well to coat.

Stir in the tomato paste, beef broth, Worcestershire sauce, freshly chopped or dried rosemary, and freshly chopped or dried thyme leaves. Let the mixture simmer for a few minutes until the sauce thickens.
