INGREDIENTS

  • 5 lb pastrami (using the point cut)
  • Waygu beef tallow, for injecting
  • SPG rub (salt, pepper, garlic)
  • 1 can of your favorite beer

DIRECTIONS

  1. Inject the pastrami with Waygu beef tallow, ensuring even distribution throughout the meat.

  2. Rub the pastrami generously with the SPG seasoning, covering all sides.

  3. Preheat your smoker to 225°F and place the pastrami inside.

  4. Smoke the pastrami until it reaches an internal temperature of 180°F.

  5. Remove the pastrami from the smoker and place it on an elevated wire rack in a foil pan.

  6. Pour one can of your favorite beer into the pan, being careful not to wash off the seasoning from the pastrami.

  7. Cover the pan with foil and return it to the smoker. Continue cooking until the internal temperature reaches 203°F.

  8. Remove the pastrami from the smoker and let it rest for 1-2 hours, allowing the meat to become tender and juicy.

  9. Slice the St. Patty's Day Pastrami and serve. Enjoy!

Notes
