INGREDIENTS

  • 8 oz uncooked rotini pasta
  • 1-2 handfuls fresh baby spinach
  • 1/4 red onion, chopped small
  • 1 yellow bell pepper, chopped small
  • 15 cherry tomatoes, quartered
  • 1 cup feta cheese
  • 1 heaping tablespoon pesto sauce
  • 1/4 cup zesty Italian dressing
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 2 tsp parsley, minced

DIRECTIONS

  1. Cook the pasta until al dente in salted water according to package directions.

  2. Drain the pasta and rinse under cold water in a colander. Set aside.

  3. In a small bowl, mix together the pesto and dressing. Set aside.

  4. Chop the bell pepper, onion, tomatoes, and fresh parsley.

  5. In a large mixing bowl, add the pasta, spinach, bell pepper, onion, tomatoes, and feta cheese.

  6. Add the salt, pepper, Italian seasoning, and minced parsley.

  7. Pour the dressing on top of the salad and toss everything together.


  8. Serve immediately or cover and refrigerate until ready to eat.
