INGREDIENTS
- 2 cod fillets
- 1 onion, chopped
- 3 garlic cloves, chopped
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 courgette, sliced
- 3 oz chorizo, finely chopped
- 1/2 cup green peas
- 200ml white wine
- 150ml fresh cream
- 1 lemon, juiced
- 1 tsp wholegrain mustard
- Salt and pepper, to taste
- 1 tsp marjoram
DIRECTIONS

Start by heating oil in a pan over medium heat. Add onion, garlic and courgettes, and saute for a few minutes until they soften.

Add cherry tomatoes, broccoli, chorizo, and green peas, and continue to cook for another few minutes.

Pour in white wine, fresh cream, and wholegrain mustard. Season with salt, pepper and marjoram. Let it come to a boil.

Add cod fillets over the top of the vegetables and chorizo in the pan. Cover the pan with another lid and simmer for 15-20 minutes until the fish is cooked through.

Once finished, remove from heat and garnish with fresh parsley and a squeeze of lemon juice.
