INGREDIENTS

  • 2 tbsp. olive oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 jalapeno peppers, seeded and finely chopped
  • 1 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cans (15 oz. each) kidney beans, drained and rinsed
  • 1 can (28 oz.) crushed tomatoes
  • 2 cups chicken broth
  • shredded cheese, sour cream, and green onions for serving (optional)

DIRECTIONS

  1. In a large pot, heat the olive oil over medium heat. Add the onion, red bell pepper, and green bell pepper and cook until softened, about 5 minutes.

  2. Add the garlic and jalapeno peppers and cook for another minute.

  3. Add the chili powder, cumin, smoked paprika, oregano, salt, and black pepper and stir to combine.

  4. Add the chicken and cook until browned, about 5 minutes.

  5. Stir in the kidney beans, crushed tomatoes, and chicken broth and bring to a boil.

  6. Reduce the heat and simmer until the chicken is cooked through and the chili is thickened, about 45 minutes.

  7. Serve hot, topped with shredded cheese, sour cream, and green onions if desired. Enjoy!
