INGREDIENTS

  • 2 lbs. boneless skinless chicken thighs
  • 1 1/2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp curry powder
  • 1 1/2 tsp turmeric
  • 1 tbsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tbsp vegetable oil
  • 1/4 cup coconut milk
  • 3 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 tbsp brown sugar
  • 1 1/2 tsp grated ginger
  • 2 tsp garlic chili sauce

DIRECTIONS

  1. In a mixing bowl, combine soy sauce, fish sauce, curry powder, turmeric, brown sugar, salt, pepper, garlic, ginger, vegetable oil, and coconut milk together until well combined.

  2. Add chicken thighs to the marinade, making sure each piece is well coated. Cover the bowl with plastic wrap or a lid and set it in the fridge for at least an hour, but preferably overnight.

  3. Soak bamboo skewers in water for at least 30 minutes before grilling.

  4. Thread each piece of marinated chicken onto the skewers.

  5. Preheat your grill to medium-high heat.

  6. Grill the chicken skewers for about 10-15 minutes, turning every few minutes to ensure that they cook evenly.

  7. While the chicken is cooking, prepare the peanut sauce by combining all the ingredients together in a mixing bowl until smooth.
