INGREDIENTS

  • 2 chicken breasts, sliced into medium cubes
  • handful cooked noodles
  • 1 tsp salt
  • 1 tsp pepper
  • 50ml soya sauce
  • 1 tbsp brown sugar
  • 1 tbsp tomato paste
  • 50ml honey
  • 30ml rice vinegar
  • 1 tbsp corn starch
  • 4 tbsp olive oil
  • 1 tbsp sesame seeds
  • 3 cloves garlic, finely chopped
  • 1 carrot, sliced into stripes
  • sliced spring onions
  • sliced ginger
  • 200 ml water

DIRECTIONS

  1. Slice chicken breasts into medium cubes and marinate them in salt, pepper, soya sauce, and corn starch.

  2. Heat 2 spoons of oil in a pan over medium-high heat. Add the marinated chicken and fry it for about 5 minutes or until it's cooked through. Sprinkle sesame seeds over the chicken and fry for an additional minute.

  3. Remove the chicken from the pan and set it aside.

  4. In the same pan, add more oil if needed and stir-fry the finely chopped garlic, sliced carrots, sliced ginger, and spring onion rings until they're nicely browned. Take them out of the pan and set them aside.

  5. Pour some water into the pan along with soya sauce and rice vinegar, brown sugar, honey, and tomato paste. Cook the mixture for a few minutes until it thickens, then add the chicken and veg. Stir well and add a handful of noodles. Cook for an additional 3-4 minutes, or until everything is heated through and the noodles are soft but still firm.

  6. Garnish your Forest Takeaway with freshly chopped parsley and serve hot.
