INGREDIENTS

  • 2 bone-in, skin on chicken breasts
  • 3 tablespoons olive oil
  • 2 cloves, minced garlic
  • 1 large, zested and juiced lemons
  • pinch of salt and pepper, to taste
  • 1 sprig fresh rosemary
  • 2 tablespoons fresh, finely chopped parsley
  • 1/2 fresh pineapple

DIRECTIONS

  1. Preheat oven to 400°F.

  2. Place chicken breasts in a large baking dish and drizzle with olive oil.

  3. Season chicken with minced garlic, lemon zest and juice, salt, pepper and rosemary.

  4. Bake in preheated oven for 20 minutes or until chicken is cooked through.

  5. Remove from oven and place in half pineapple bed with rice under then garnish with freshly chopped parsley before serving.

Notes

Use pre-cooked chicken to save time. Serve with steamed vegetables and a side of white rice for a complete meal.
